Speaking of Thanksgiving...
Have you started thinking of Thanksgiving yet? I have--just barely!
I would like to share with you my favorite recipe for sweet potatoes for the holidays. We don't really care for the candied kinds of recipes, so I came up with something that is rich and delicious, but not sugary. I love to serve this with a roast pork loin!
Creamed Sweet Potatoes
1 medium sweet potato per person
1 tablespoon butter per potato
1 ounce cream cheese per potato (note: do NOT use fat free)
Prepare the sweet potatoes as you would for mashed potatoes. (Leave the skin on for more nutrition or remove it for more smoothness.) When the potatoes have boiled to a very soft texture (it will take longer than for white potatoes), drain, add the butter and cream cheese and mash. That's all there is to it!
I suppose you might want to add a touch of salt, if your family hasn't cut down like mine has.
Also, if your kids will rebel against the lack of marshmallows, you could put these potatoes in a Pyrex, ring them with marshmallows and then place under the broiler for a minute or two.

Uh, you gotta have the marshmallows. We all gots the entire year to go on diet. Not for Thanksgiving, NO. No more Tofukeys for this kid.
