My Husband's Banana Bread

My DH makes the world's best banana bread--and it's not just so good 'cause I didn't have to make it!

Actually I have tried to make it several times, usually thinking I could improve upon it. The last time I improved it so much we had to throw it away--it was totally inedible!

So, I'm giving you the recipe--but be forewarned: don't change anything!

Banana Bread

Ingredients:
1 cup sugar
1/2 cup cheap margarine (can also use plain Crisco), softened, but not melted
1 egg
5 tablespoons of soured milk (4 tablespoons of whole milk and 1 tablesoon of lemon juice)
1 teaspoon of baking soda
1/2 teaspoon of salt
1 1/2 cup flour
2 mashed, old bananas
1/2 cup chopped or broken nuts (pecans or walnuts), optional

Procedure:
VERY generously grease then flour a loaf pan.
Then, using a stand mixer and a slow speed, cream together the margarine, sugar and banana. Continue to mix while slowly adding the eggs and soured milk, then the other dry ingredients. The mixing process should take several minutes, in order to incorporate air into the batter. If adding nuts, do so last, folding in gently with a spoon.
Pour into the prepared loaf pan and cook for 50-60 minutes at about 325. Begin checking at 50 minutes. Loaf should be gently browned, but not go so far as to dry out.
Immediately turn out of loaf pan onto cooling rack. Eat while still warm, with butter!

Hey, there's no lard in this recipe?

Uh, you shouldn't be feeding margarine to yer family. That's really highly processed trans fatty stuff that should be avoided at all costs. Plus it tastes nasty. Unless you're using something like benecol that reduces your cholesterol up to 10% er somethin'. Use butter, at least it came from something worth eating.

We've had this discussion before. Margarine is from the devil. We use Smart Balance, which is the same thing as Benecol, but cheaper.

You CAN NOT use butter in this recipe. I tried. That was the time it was so inedible we had to throw it out. It burned--didn't rise--tasted very strongly of baking soda?.

We have not tried this with the Smart Balance, but it cooks well in other uses, so we may try it next time. However, seeing as how we eat maybe 6 loaves of banana bread a year, I'm not going to freak out about that amount of margarine.

See, that's why I'm not a baker. I wonder what my wife uses? Cause I haven't seen margarine since maybe 1980. We don't have any shortening, just fresh rendered lard. I'll git back to ya,

Okay, did a little research. As we've already decided margarine sucks, shouldn't be using that. I'll bet you're using some kind of refined white sugar? Bad. Turns out honey is also not such a great thing for diabetes. What you need to find is DATE SUGAR. Look locally or order it online. Turns out sugar from fruits isn't quite as bad for you as refined & honey.

You're looking for what my wife calls, "The Hippy Dippy" version to Banana bread. Our copy of Laurel's Kitchen BREAD BOOK fits the bill. I'm sure it's cheap, go to amazon and order yourself a copy. Here's what's in her banana bread:

1/2 cup date sugar
3 TBS oil or butter
1 tsp vanilla (optional)
1/2 tsp salt
2 cups of yer mashed ripe bananas
2 TBS lemon juice, fresh only

1 1/2 cups whole wheat pastry flour
1/2 cup whole wheat bread flour
2 tsb baking powder
... she goes on to add dates or dried apricots
... and toasted walnuts, pecans or filberts.

Personally I ain't hip to the dried fruit & nuts.

I truly believe armed with some specially picked cook books you and yer hubby will do fine with the new diets. Keep it fresh, keep it simple and use refined nothing. Again, Graham Kerr will be your best friend in the cookbook section.

I know I said don't change anything in the original recipe, but I was going to experiment with whole wheat flour, because DH's glucose doesn't skyrocket when he eats that.

I think I may have to try the recipe you've included, for just that reason. Hmmm, I wonder how far I'll have to go to get date sugar?

Hey Karen,

Give that banana bread recipe a try. If you can't deal, I'll try. I know the date sugar may be a tough one, but good ingredients aren't usually the ones at eye level at your local Super.

I've used a lot of cameras over the years. I could have produced that shot with many cameras, don't rely on the hardware.
I'm willing to put in some time to help, if'n that something yer interested in. ?

OooOOOoo, sounds as though you have a nice market available. Take a few hours off and spend time hanging out in each isle. Have some fun, you don't have to buy anything. But look, watch and take note. Spend time with their butcher and see what they're about. Do they have natural beef, pork & chicken? What are they known for locally? It's so much fun.
