Fried Egg Sandwich
I have been having this for breakfast, lately. Sometimes, it's like a drug--I just GOTTA have it!
Ingredients:
2 slices sourdough bread, toasted
1-2 eggs, fried to your liking
2 T picco de gallo
1-2 t mayonnaise
Procedure:
I like my eggs with the yolk broken and thoroughly cooked, but you fry yours up however you like. While the eggs are cooking, toast up some bread and get out your mayo and picco. When the toast is done, spread one side with a generous amount of mayo, add your picco on top of the mayo (to help hold it in the sandwich), top that with the egg(s) and the last slice of toast. Eat over a plate or the kitchen sink, 'cause it's messy!
My current favorite picco recipe follows.
