Pecan Wheat Muffins


Mix together the following dry ingredients:
1 c. flour
1/2 c. whole wheat flour
1/2 c. pecans
2 t. baking powder
1/4 t. salt
1/2 t. dried orange peel
1/4 c. brown sugar

Next, mix together the following wet ingredients:
1 egg
1/2 c. milk
1/4 c. honey
1/4 c. oil

Combine all. Pour into muffin cups (use paper liners) and bake at 400 for 18 to 20 minutes. Makes 12 muffins.

Note: these are best right our of the oven, buttered, or toasted and buttered if eaten later.
Note: the original recipe called for 1/2 cup honey and no brown sugar. I didn't have enough honey to do--but you might want to try it and see what flavor change it makes. The original recipe also called for 1/2 teaspoon of fresh grated lemon peel, also something I didn't have. Try that, too, and see what kind of flavor it adds.
